30 ml Citadelle Gin

20 ml Bee Pollen Syrup (or Honey)

Topped with East Imperial Burma Tonic

Garnish Sunflower petals, Cardamon seeds, and star anise pod

Tom from Golden Dawn makes a serious and seriously delicious cocktail

45ml Plantation Pineapple Rum

30ml Lime Juice

30ml Egg White

10ml Orgeat

Muddle some pineapple

3 dashes Peychaud's Bitters

30ml Tepache

Add ingredients to boston shaker - dry shake

Add ice then wet shake.

Strain into chilled coupe. Yum!

Dan from the Golden Dawn joins Jonny a Big Hungry to make Plantation Pineapple Rum Daquari

45ml Plantation Pineapple Rum

30ml Lime juice

1 teaspoon sugar

1 slice fresh pineapple

Add sugar to boston shaker, add rum, add lime juice. Shake over ice. Double strain into coupe glass. Add slice of pineapple to garnish.

Dan from the Golden Dawn makes a simple but amazing cocktail with Mancino Bianco Vermouth.

Golden Peaches

60ml Mancino Bianco Vermouth

1 peach sliced 

1 sugar cube

20ml lemon juice

Muddle sliced peached in boston shaker. Add sugar, vermouth & lemon juice. Shake over ice. Double strain & pour over ice in wine glass.

50ml Mancino Ross Vermouth

30ml Plantation dark rum

1 dash Angostura

1 dash orange

Flame orange over ice - stir.

Serve in small brandy glass.

Sometime 

60ml Mancino Bianco Vermouth

5 dashes Peychauds Bitters

20ml Lemon Juice

1 bar spoon of Pineapple Syrup

Top with East Imperial Ginger Beer

Garnish with Thyme.

Dan from The Bramble impresses once again with another exciting cocktail.

9th Life

In a shaker add

Half an egg white

30ml Pierre Ferrand 1840 Cognac

30ml Pierre Ferrand Curcao

20ml Nuoc Mau (Vietnamese Caramel Syrup)

20ml Lemon Juice

Pinch of Sea Salt

Large pinch of Chinese 5 spice

Ice

Shake hard and double strain into a coupe

Spritz a twist of Orange zest over the top and discard.

 

Nuoc Mau

In a sausacepan add 1C white sugar & 1/4C water

Heat on a medium heat stirring until dissolved

Then heat until it begins to turn tea brown and the bubbles orange

Resist stirring through the heating process

Once the syrup darkens under the bubbles by gently swirling to see, place the pot in a sink of water to cool

Add 1C cold water and avoid the splitting reaction

Place the pot back on heat and stir until it becomes a syrup

Cool and bottle.
