Gwilym from Hancocks goes all out and makes a great tasting and good looking cocktail with Cointreau.
Rainbow Magic
30ml x Cointreau
30ml x Botanist Gin
30ml x Lemon Juice
2 Dashes Peach Bitters
1 Cube of Papaya
East Imperial Royal Botanic Tonic
Garnish – Mint Sprig, Orange Wedge, Papaya Wedge and Cocktail Umbrella
Combine all ingredients except tonic in a shaker and shake with ice. Pour into higball glass/ tiki mug.
Top with tonic and garnish.
